Chocolate Covered Strawberry Pink Velvet Cupcakes





Makes 24 cupcakes

1 cup butter (soft)

1 & 1/4 cup sugar

3 eggs

1 teaspoons vanilla

2 & 1/2 cup flour

1 & 1/2 teaspoons baking powder

1  teaspoons baking soda

1/4  teaspoon salt

1 cup buttermilk

Pink gel food coloring (until desired color)



8 oz cream cheese (soft)

1/4 cup butter (soft)

3 cups powdered sugar

1  teaspoons vanilla


  • Preheat oven to 350 F
  • In a stand mixer (or large bowl with a hand mixer) cream together butter & sugar
  • Once combined- add your eggs one at a time, mix through & add the vanilla
  • In a separate bowl combine dry ingredients and whisk together
  • With the mixer on low, alternate between adding dry mixture & your buttermilk until dough is formed
  • With a toothpick slowly add a small amount of the food coloring- mixing well before adding more until the desired color is reached
  • Scoop the dough into a lined cupcake tin & bake for 23-27 minutes or until a toothpick comes out clean
  • Set them aside to co0l
  • Using a stand mixer or a handheld- cream together cream cheese & butter until light and fluffy
  • Add in vanilla and mix through
  • Slowly add a bit of powdered sugar at a time, combining fully – making sure to tase between each addition until desired sweetness is achieved.
  • Continue to whip frosting until pipeable
  • One cupcakes have cooled – pipe on cream cheese frosting and finish off with a chocolate dipped strawberry
  • Enjoy!
