Do you know whats better than a cookie cake?
A 4 layered cookie cake with boiled milk frosting.
I went there.
WACHOO NEED FOR YO COOKIE CAKE
4 cups all purpose flour
1 ½ tsp salt
1 tsp baking soda
1 & ½ cups butter, melted
2 cups brown sugar, packed
1 cup white sugar
2 large eggs
2 large egg yolks
4 tsp vanilla bean paste
4 cups chocolate chips
MAKE YO COOKIE CAKE
Preheat oven to 325 degrees F
Prep 4 round cake cans with cooking spray & parchment
In a large mixing bowl, combine flour, baking soda & salt
In a separate bowl, whisk together your butter and both kinds of sugar until combined
In same bowl, add in each egg individually until fully combined
Stir in vanilla
Fold the wet ingredients and dry ingredients together, careful not to over mix
Add in chocolate chips and stir until evenly distributed
Evenly distribute the batter across the four baking pans & press batter to the edges
Bake for 20-28 minutes or until just golden brown- don’t over bake!
Remove from oven & place on wire racks until fully cooled
DA STUFF YA NEED 4 YO FROSTING
4½ tbs all-purpose flour
1 cup white sugar
pinch of salt
1 cup milk
1 cup unsalted butter (softened to room temperature)
½ tsp vanilla extract
WHIP DAT FROSTING
Wisk flour, sugar and salt & milk in a medium-sized saucepan
Place saucepan over low heat & whisk continuously until it comes to a boil
Once it starts bubbling, cook for 1-2 minutes over the flame
Then take the pan off the heat & whisk for another minute
Pour the pudding mixture into a bowl & immediately cover it with plastic wrap, making sure it touches the pudding directly- & cool to room temp
Once it has cooled, beat butter in a med-sized bowl until for 5-7 minutes until fluffy
Add the cooled pudding mixture one tablespoon at a time
Once all the pudding has been added, mix for another few minutes, until smooth
Add vanilla and combine
Serve it up to your cake hating friends (who are you)
