Salted Caramel Apple Crumble Pie

Oh happy fall, the season of pumpkin spice lattes and basic bitches frolicking in the leaves

To celebrate, I’m showin’ yaz how to make a salted caramel apple crumble pie

damn that’s a mouthful

…in both senses

okay here we go

 


INGREDIENTS


PIE CRUST

1 Pie Crust (homemade or store bought)

PIE FILLING

5 large apples (a variety!) core em’ peel em’ & slice em’ about 1/4 inch thick

2 tablespoons (30ml) lemon juice

1/4 cup (31g) all-purpose flour

1/4 teaspoon ground cloves

1/4 teaspoon ground nutmeg

1 teaspoons cinnamon

1/2 cup (100g) granulated sugar

1 teaspoon vanilla bean paste

CRUMBLE TOPPING

1/2 cup (100g) packed dark brown sugar (can use light too)

1 teaspoon ground cinnamon

3/4 cup (94g) all-purpose flour

1/3 (75g) cup unsalted butter, grated

SALTED CARAMEL SAUCE

1 cup (200g) granulated sugar

6 tablespoons (90g) butter, cut up into tablespoons

1/2 cup (120ml) heavy cream

1 teaspoon salt


INSTRUCTIONS


PIE CRUST

Make your favorite crust recipe or use store bought!

PIE FILLING

In a large bowl combine apples & lemon juice

Add in flour, spices, sugar, vanilla paste & stir until combined

Set filling aside while oven preheats 400°F (204°C).

Roll out one disc of chilled dough into a circle

Lay the dough into your pie dish & pinch corners

Fill crust with apple filling, leaving out the liquid

Pop pie into fridge for time being

CRUMBLE TOPPING

Mix brown sugar, cinnamon & flour in bowl Grate frozen butter, & using your hands combine it with sugar mix

Pop crumble mix into freezer for 5 minutes, you want cold butter! Once chilled, take pie out of fridge & take crumble out of freezer

Sprinkle crumble over pie & place on baking sheet & bake for 20 min After 20 min, turn the temp down to 375°F (190°C)

Bake for another 30-35 minutes & tent with foil

Cool pie to room temp before serving

SALTED CARAMEL SAUCE

Heat sugar in saucepan over med heat stirring w/ wooden spoon Sugar will melt into an amber-colored liquid, but don’t burn it!

Once sugar is melted, quickly add the butter, 1 tbs at a time.

When added it will bubble up so be careful!

When butter is full combined, add in heavy cream while stirring

Again, it’ll bubble up so be careful!

Let caramel boil for about a minute, keep an eye on it!

After 1 minute, take off the heat & stir in salt.

Let it cool for a min & then CAREFULLY pour into heat safe container Make sure let it cool down before using!

    My cousin and I made this pie. It was delicious. The toffee was amazing and I left the rest harden and make sweets. I will definitely make it again! Only next time I will blind bake the pastry as it was slightly doughy. I think it might be because we did not use pie crust, we used shortcrust pastry as that was the nearest we could get in the UK.

    STORY TIME:
    I wanted to make this apple pie on thanksgiving day so I went out to 4 different stores to find everything because I was so wise and tried to venture out the day before thanksgiving! Anyways I wake up on thanksgiving morning in a panic because I FORGOT THE FREAKING PIE CRUST!!!! I was so mad and all the store were closed 🙁 Thankful my mom bought bought a pumpkin pie before hand so we didn’t go pie-less thanksgiving day however I was really upset. I finally got the pie crust today and just finished making it and OM GOODNESS WOW! My family said it was definitively worth the wait 🙂 So I would like to say on behalf of my whole family thank you for this recipe!
